Nestled in the woods of South Western Maine you will find Chad & Nicole Humphrey designing and developing new and exciting BBQ accessories, giving an old pit a new chance at life, or developing their new line of BBQ Smokers, The Humphrey Smoker. Since 2010 Competition teams, caterers, restaurant owners from all over the country have sent their cookers in to be rebuilt or enhanced because they know

they that they will receive a fix that will meet or exceed their expectations at a fair price. In 2012 the decision was made to start prototyping a cooker that filled the short comings of other manufacturer’s products and the Humphrey Smoker project was started. The Humphrey Smoker prototype was used in a commercial cooking environment at several events by Chaddy Daddy’s BBQ Shack and in KCBS Competition by The Meat Fairy. With the 2012 Vending and Competition season completed we were able to evaluate all of the feedback and data that we obtained and make changes to enhance the prototype and develop a line of cookers that fit several scenarios. We will still offer a full and growing line, of BBQ Accessories, and restore and enhance other manufacturer’s cookers.

One thing people don't realize about the Hot Box is just how well it makes pizza and flatbreads.

The secret starts with quality charcoal and temperature control. For that perfect crunch on the bottom of your flatbread, I like to run the Hot Box between 400° and 450°F. That temperature gives you a crispy crust without drying everything out on top.

My favorite flatbread we've made lately was a Buffalo Chicken Pizza. I started with Springer Mountain chicken tenders, thawed them, warmed them up, chopped them into bite-sized pieces, and tossed them generously in buffalo sauce.

For the build, I spread a light layer of pizza sauce on the flatbread, added mozzarella cheese, then sprinkled on chopped carrots and celery. Next came the buffalo chicken, followed by another drizzle of buffalo sauce and a finishing drizzle of ranch.

The result? Crispy crust, melty cheese, a little crunch from the carrots and celery, and just the right amount of heat from the buffalo sauce. It disappeared so fast we should have made more!

Andre brought us his new trailer with Myron mixing gravity feed on it and wanted to outfit it with a couple of Humphrey smokers.

So we took the challenge on and worked out the layout, what would be most efficient for him during competition barbecue.

Nicole had a great idea to build a removable stainless countertop that could be installed facing inward to the trailer for travel and outward so that Andre could use the counter from outside the trailer and inside the trailer.

Here's some pictures of before and after showing how it arrived and when it was completed.

Andre picked up his trailer and was very excited to get it and use and start competing again. Thank you, Andre.

Big project in the shop right now! 🔥

We’ve been tasked with mounting a pre-owned Myron GF, a brand new Humphrey’s DownEast Beast, and a new Hot Box onto this competition trailer setup. The goal? Help get this customer get back out on the BBQ circuit with a trailer that’s functional, efficient, and ready for long competition weekends.

While planning the layout, we also suggested adding a removable stainless steel counter to give them some much-needed prep space without permanently taking up room. Little details like that can make a huge difference during turn-in crunch time when every inch of workspace matters.

This is the kind of project we love — combining fabrication, functionality, and real competition experience to build something that actually works for teams on the road. Can’t wait to show the finished setup once everything is mounted and dialed in. 🔥🏆

Shawn fired up the Humphrey’s Battle Box and put together a killer spread of smoked queso and nachos. The addition of chorizo to the queso brought just the right amount of heat and richness, and letting it ride in the smoker gave everything that extra layer of flavor you just can’t get in the oven.

One tip when making smoked queso: don’t rush it. Let the cheese slowly melt and stir it every 20-30 minutes so the smoke flavor blends evenly without the cheese getting oily or separating. We also like to layer flavors by cooking the meat first and using some of those drippings right in the pan. Small details like that are what take queso from “good” to “everyone standing around the pan with chips.” 😂

Usually this time of year Mom and Dad are packing up the trailer, loading the smokers, and chasing another BBQ competition somewhere across the country. But this weekend is a little different.

This weekend, we’re slowing down. We’re at camp, hanging out by the new pavilion display, remembering what Memorial Day is really about — honoring the men and women who gave everything for our freedom. 🇺🇸

Now don’t get me wrong… I already miss seeing all my BBQ friends out on the competition circuit. I miss the smells rolling through the campground at 5am, hearing generators humming, sneaking visits to neighboring cook sites, and watching everyone hustle during turn-ins. There’s just something special about BBQ family. ❤️🔥

But the smokers aren’t getting the weekend off completely… I caught wind there’s gonna be a little rib and chicken practice happening. You know… “just for fun.” Which in BBQ language means Dad will still be obsessing over temps, Mom will still be arranging turn-in boxes in her head, and I’ll still be supervising closely for any meat that accidentally hits the ground. 😎🥩🐔

Honestly though, it’s nice being here. Good food, good people, campfires, and a little time to appreciate what matters most.

So now I gotta ask my fellow BBQ friends…
