Watermelon Fire & Ice Salsa
Juicy watermelon replaces tomatoes in this salsa that's simultaneously cool and spicy hot -- perfect for a spring or summer barbeque.
8 cups diced, seedless watermelon (about 1/2 of a medium sized melon)
2 cups diced Pineapple (optional)
1 teaspoon kosher salt
1/2 cup chopped green bell pepper
1/2 cup chopped pickled jalapeno peppers
1/4 cup finely diced red onion
1 tablespoon minced garlic
2 green onions, chopped
Juice of two limes and zest from one
1/4 cup of chopped, fresh cilantro, or to taste
Additional kosher salt & freshly cracked black pepper, to taste, and keep the Tajin handy
Instructions:
1. Place a colander over a bowl. Dice the watermelon and add to the colander; toss with the teaspoon of salt. Cover and refrigerate several hours or overnight to drain; toss and drain off excess juices occasionally.
2. When ready to serve, mix all of the remaining ingredients together except for salt and pepper. Add mixture to the watermelon, toss and taste.
3. Add salt and pepper as needed
