Easily enough for 1-1/2 to 2 pounds of boneless skinless fish fillets.
1/2 stick of butter, melted ( more if desired )
1-1/2 T Apple Smoked Salt ( 3/4 ounce )
2 T Paprika
1 T Garlic Powder ( scant )
1 T Onion Powder ( scant )
1 T Ground black pepper ( scant )
1 t Ground Thyme
1 t Ground oregano
1/2 t Cayenne pepper
Caution - cook outside and in cast iron pan only!! I used a cast iron skillet on my barbecue grill with the grill rack removed so the pan could get super hot close to the flame and NO oil. The hotter it is the better. Mix all dry ingredients in a small bowl. Using thawed or fresh fillets, rinse and blot out excess moisture. Coat both sides of the fillets with melted butter and then sprinkle on and lightly rub the spices in. In the super hot skillet, it took about 90 seconds per side to blacken, yet left the fillets moist and cooked inside.... Yum!!!
