We only use sea salt which is smoked over real wood with no artificial smoke flavoring used. Unlike most smoked salt sold online - we use a finer grind which gives it a much more intense flavor. ost ). Hickory, Maple and Apple are available now. Use it as you would regular table salt if you think a bit of smoky flavor might be good. Meats, vegetables, superb on french fries, salads, the possibilities never end. Blackened Cod fillets using Smoked Apple Salt

Easily enough for 1-1/2 to 2 pounds of boneless skinless fish fillets.

1/2 stick of butter, melted ( more if desired )

1-1/2 T Apple Smoked Salt ( 3/4 ounce )
2 T Paprika
1 T Garlic Powder ( scant )
1 T Onion Powder ( scant )
1 T Ground black pepper ( scant )
1 t Ground Thyme
1 t Ground oregano
1/2 t Cayenne pepper

Caution - cook outside and in cast iron pan only!! I used a cast iron skillet on my barbecue grill with the grill rack removed so the pan could get super hot close to the flame and NO oil. The hotter it is the better. Mix all dry ingredients in a small bowl. Using thawed or fresh fillets, rinse and blot out excess moisture. Coat both sides of the fillets with melted butter and then sprinkle on and lightly rub the spices in. In the super hot skillet, it took about 90 seconds per side to blacken, yet left the fillets moist and cooked inside.... Yum!!!

Gotta love having someone on your side that thinks our smoked salt is the best thing ever. The bigger plus is that Kerry could probably sell used toilet paper back to Procter and Gamble to make super recycled Charmin. I am beginning to feel a contract coming on.

Yummy - Old Salty & Son Smoked Salt reached a new peak of selfish culinary flavor......Salmon would have been better so I give it 8 stars instead of 10. But the mix is right on!!! Recipe tomorrow....

Tonight will be my first attempt at blackened fish. ( cod fillets ) I have the mixture made and think it will work out very nicely. Recipe posted tomorrow after my trial run today. And yes - it is a cook outside only dish because of the high heat and smoke that will be generated. I feel a yum happening.....

One tray of Maple Smoked Salt is looking good!!! Seems to be begging for some chicken to use it on, a marinade letting the chicken absorb the flavors then slow grilled or baked to a juicy perfection.

Our original Frankensmoker is chugging away once again with about 7 pounds of Maple Smoked Salt which should be done about Friday. We have also changed bottle caps to be sift only with smaller holes to allow for easier sifting.
