“First Crack” in roasting is when the beans reach approximately 375-400deg F and enter an exothermic reaction, expelling built up energy, steam, & CO2 from their inner core.

Listen 🎧 closely to this video and you will hear the popcorn like sound amongst the other noises the roaster produces. This is when the beans turn more brown and the aromas omitted are more coffee like.

Besides one being a & the other being a they are completely different tasting beans beings they are from different coffee farms in Ethiopia.
