Last week a cocktail from the hosts of our recent virtual journey to Colombia. This week is a recipe. Enjoy the end of summer this weekend with this!
2 lbs jumbo shrimp, peeled and deveined
2 lbs fish any kind, cut into 1 in pieces
12 littleneck claims, scrubbed
1 c chopped onion
s in Colombia!1 c grated carrots
1 c fish stock
½ c chopped green pepper
½ c chopped red bell pepper
3 tomatoes, pureed
1 tbsp chopped fresh cilantro
1 tbsp chopped fresh parsley
1 ¼ cup coconut milk
½ c white wine
1 tbsp butter
1 tbsp olive oil
2 garlic cloves, minced
¼ tsp paprika
Salt & pepper
In a large skillet, add olive oil and butter to medium heat.
Add the onions, red pepper, garlic, green peppers and carrots and saute for about 10 min or until tender and translucent. Season with salt and pepper.
Whisk in the coconut milk and fish stock, then bring to a boil. Stir in the seafood, reduce heat and cook, covered for 2 min until claims open.
Remove from heat and discard any unopened shells. Pour the wine and tomato puree, stir and let simmer for 20 min.
Garnish with fresh cilantro and parsley and serve hot. Makes 4 servings.
For those that joined my on the virtual journey to Colombia a couple of weeks ago, a "gift" from our Colombian hosts to enjoy this weekend.
Passion Fruit Mojito (can also use mango)
1/2 lime, quartered
3 tablespoons fresh passion fruit pulp (or use mango)
1 teaspoon brown sugar
1 1/2 ounces rum
1 cup ice cubes
Using a muddler or wooden spoon, lightly crush lime, passion fruit pulp and sugar in a mixing glass to release juice.
Cover with crushed ice and fill glass with your favorite rum. Mix with a spoon and serve immediately

Madagascar’s Tsingy de Bernaraha Nature Reserve, a UNESCO World Heritage site is the largest example of a tsingy forest on earth. The tall, thin, needle-like rock formations stretch over 375, 000 acres with some rock pinnacles reaching over 2600 ft! What an adventure! And along the way, the beautiful baobab trees. These enormous trees are up to 2800 years old! Two amazing sites!
So the pandemic has accentuated my distractibility. Back to Madagascar and off to the Makay which is both a mountain range and a river. Rugged, beautiful, magical and remote! A wonderful way to escape.

This weekend the Australian National Tourism Board is hosting Live from Aus, a full weekend of virtual travel from across Australia. Amazing what wind and water can do to rock. The ridges, rock formations, gorges and canyons in the Isalo National Park have all been formed by erosion of the sandstone mountains! We got to move it, move it! (Keeps running thru my head. :) )

One of the things I find most challenging during these tough time is keeping myself engaged. It's so easy to sit on the couch and vege.. Yesterday I created my list of projects and started one - cleaning the grout lines in my kitchen floor. Ok so not the most mentally engaging, but I did get some satisfaction on getting something done. But this also doesn't help my yearning to travel. To the rescue - one of my favorite suppliers! While I can't travel to Italy, his guides (and Wizard of Odysseys clients love these guides) are conducting virtual tours thru some of Italy's most famous and some not so famous sites. I can now visit Hadrian's Villa outside of Rome that I missed! So enjoy some of the sites that you yearn to see!

Many years ago when my husband were living in Europe we took a very inexpensive bus tour to the Netherlands during tulip season that turned out to be one of the best trips of our lives. To drive by field after field of brilliant colors was magnificent. One of the best unexpected surprises was the Flower Parade in Keukenhof. As it started we didn't thought it was kind of a rinky dink small town parade. We were so wrong! The floats covered in flowers got bigger and better and the most unexpected was the smell of the flowers that covered the floats, It was a luscious fresh smell that envelopes you in gentle waves.
Its a cloudy day here in NOVA, but this video should help lift some spirits. Enjoy this video! Note: In the Netherlands, the flowers are the trash part of the crop so they are cut off so the nutrients and growth are sent to the bulb-the money making part of the crop.

Its a holiday weekend and we are stuck in side. What to do? I have a suggestion. A cooking class with Matteo direct from Italy. Clients earlier this year took a cooking class with Matteo and they said it was the highlight of their trip. Class is at 5pm tomorrow (Sat 11 Apr) so you can make dinner during the class. The menu tomorrow is gnocchi with pesto and vegetarian cauliflower mousse. Best of all? Wine during class is encouraged.
