Which crawfish size is right for you?

🦞 PEELERS
These are the smaller crawfish, and they’re perfect for dishes like étouffée, pasta, or gumbo. Peelers average 30/40 count per pound, and you can get a surprising amount of tail meat per pound if you’re peeling for recipes.

🦞 🦞 FIELD RUN
This is the classic, most popular option. It’s the real “boil crawfish” size and it’s a mix of crawfish sizes, especially early in the season. 18/22 count per pound.

🦞🦞🦞 SELECT
These are Justin’s personal favorite. A classic premium size of crawfish with big claws and big tails, and our grader makes sure only large crawfish make it into this grade. 12/17 count per pound.

🦞🦞🦞🦞 JUMBO
The show-stoppers. If you want massive crawfish to impress your dinner guests, these are it. These are the crawfish that make it all the way to the end of the grader. U/12 count per pound.

🦞 If you’ve been waiting to order, this is a solid time to do it. Supply is strong, the crawfish are coming in good, and these specials are built for a simple backyard boil without overthinking it.

We’re at that point in the season where crawfish are still coming in strong, but we’re also getting closer to the end of it.

Early season can be a little unpredictable. Prices are usually higher, supply can be tighter, and the crawfish are still working their way into a better size range. Right now is different. Supply has been strong, the crawfish have had more time to grow, and it’s a lot easier to put together a good backyard boil without overpaying or overcomplicating it.

That being said, summer does not last forever for live crawfish. Once we get deeper into the heat, the season starts slowing down. So if you’ve been waiting to do one more boil, this is a really good window to do it.

🦞 Three tips to keep mail ordered crawfish alive.

Quick disclaimer first. These tips are for MAIL ORDERED crawfish. To get them to your door overnight, we ship them chilled with gel packs so they ride in a hibernated state. That changes how you handle them compared to crawfish you buy live locally.

1️⃣ Let them wake up before you purge
If you plan to purge, do not dump them straight from that chilled, sleepy state into water. Let them warm up a bit and get a little active first, then start your purge. If you rush it, they can drown and you’ll create more dead loss than you should.

2️⃣ Keep them cool and dry while you wait
If you need to hold them for a few hours before the boil, keep them in the sack and keep them in shade. You can set the sack in a drained ice chest and lay ice on top so it melts through the bag. If you’re using a styrofoam box, poke drain holes. The goal is simple. Keep them cool, and make sure melt water can drain out so they are not sitting in water.

3️⃣ Do not try to keep them overnight
We always recommend boiling the same day they arrive. Live crawfish are perishable, and waiting until the next day is the fastest way to increase dead loss.

🦞 Live Guarantee note. A small amount of dead loss is normal (less than 5%). If your dead loss exceeds 5% of the total weight, take clear photos immediately upon opening the sack on the day of delivery and contact us right away. This coverage is for arrival day. If you try to hold them overnight, we can’t help you there.

Why would someone want PURGED crawfish? I’ll give you three compelling reasons.

1️⃣ LESS RISK IF YOU’RE NOT USED TO PURGING
Crawfish are delicate. If you’re not experienced with purging and you make a few mistakes, it can lead to more dead loss than it should. If you don’t have time to learn it, or you just don’t want to gamble with a whole sack, purged crawfish are worth checking out.

2️⃣ THE WAY WE DO IT IS THE RIGHT WAY
LSU AgCenter tested different methods years ago, including the old school salt wash, a regular freshwater wash, and purging in aerated tanks. The takeaway was simple. Salt doesn’t help like people think it does, and the most effective way to actually clean them out is an aerated freshwater purge over time. That’s exactly what we use. We purge overnight in aerated freshwater tanks to get the mud out.

3️⃣ IT SAVES YOU TIME ON BOIL DAY
Purging is one more thing that can slow you down when you’ve already got plenty going on. With purged crawfish, you’re cutting out a whole step, and you can get straight to cooking.
