Jay Hippey and George Sirianni started Denver Meat Co. in 1969 with a recipe and a building on Railroad Street.

They didn't have a marketing department. They had a smokehouse and a decision to not cut corners.

Today Matt Forney — George's grandson — runs the same operation out of the same building. The casings still get tied by hand. The smoke is still real hickory. Nobody's found a good reason to change any of it.

Fifty-seven years is a long time to not get bored of doing something right.

A grilled cheese with nothing in it is a snack. A grilled cheese with ring bologna in it is lunch.

Fry the rounds first in a dry pan until the edges curl. Set them aside. That pan is now seasoned and you're going to use it.

Build the sandwich — cheese, bologna, cheese. Cheese on both sides of the meat or it won't hold together.

Butter the outside of the bread, not the pan. Low heat. This is where everybody rushes and ends up with burnt bread and cold cheese.

Press it. Flip it once. Cut it diagonal.

Brown mustard on the side for dipping. You'll thank us.

Grill your Hippey's Franks first and get real char on them. This matters — the smoke has to cut through everything coming next.

Butter the buns and toast them face down in a pan. Thirty seconds. Don't skip it.

Load them up with hot macaroni and cheese. Homemade if you're that person, boxed if you're honest. Nobody's grading you.

Shredded sharp cheddar over top while everything's still hot enough to melt it. Crack of black pepper.

Eat it standing over the sink. That's not an instruction, that's just what's going to happen.

This is the week to figure out which one is actually your favorite, because you can afford to find out.

Hippey's Franks at $6.99 a pound this week. Both sizes.

Leininger's Quality Meats has them at Boscov's Fairgrounds Farmers Market in Reading — one pound packs and three pound packs, same price per pound.

Grab the one pound if it's just a couple of you and you want them gone by Sunday.

Grab the three if you've got a family that actually eats. Some for this weekend, the rest split into the freezer, and you don't think about dinner again for a month.

Beef and pork, hickory smoked over real fire. No fillers padding out the weight — which matters a lot more when you're buying three pounds of it.

Split them lengthwise and sear them flat in a cast iron. Butter the buns. You'll understand.

The corn's down. The mornings are cold. Somebody in your family has already said "well, it's fall."

This is our season. Always has been.

Ring bologna showed up at Pennsylvania harvest tables because it kept, it traveled, and it fed people who'd been working since five in the morning. That's not marketing. That's just what it was for.

Fifty-seven Octobers out of the same smokehouse on Railroad Street in Denver. Same recipe. Same hickory. Same reason people keep buying it.

Leininger's Quality Meats has Hippey's Ring Bologna at $6.99 a pound this week.

Here's the thing about buying it at a real meat counter: you tell them how much you want. Half a ring. A pound. A little piece to see if you like it. Nobody's going to look at you funny.

But at $6.99 a pound — why wouldn't you take the whole thing?

Slice some thick for the pan. Slice some thin for sandwiches. Put the rest in the freezer, because ring bologna freezes like it was built for it and November comes at you fast.

Corn syrup. Modified food starch. Sodium phosphates. Autolyzed yeast extract. And "flavoring." That's all it says. It doesn't tell you what flavor or where it came from.

Fourteen ingredients to make one hot dog. Fourteen.

Here's ours. Beef. Pork. Salt. Spice. Real hickory smoke.

That's not us being fancy. That's just what a hot dog is when nobody's trying to make it cheaper.

We've been doing it that way in Denver, PA since 1969, and the recipe hasn't been "improved" once.
