My Elderberry Oxymel syrup is based on a very old but effective preparation. It starts out by infusing elderberries and supporting herbs in apple c***r vinegar for a few weeks then strain. Next I make a low and slow simmered decoction of the same ingredients while adding some fresh to get the most benefits. Then that is strained and they are both combined and honey is added making a syrup that is shelf stable for about a year.
