Can you take the heat? 🌶️🌶️🌶️

UNESCO Intangible Heritage Harissa.

One of our favorite visits of the trip was a harissa workshop followed by the most delicious meal of our trip. We tried a traditional method of pounding in an olive wood mortar and pestle and a more modern metal press. The difference in taste, color, and consistency was surprising. Full of laughter, tasting, and lots of learning!

From the UNESCO site:
“Harissa, a seasoning made with chilli pepper paste, is an integral part of domestic provisions and the daily culinary and food traditions of Tunisian society. It is usually prepared by women in a convivial and festive family or neighbourhood setting. It is prepared by drying the chilli peppers in the sun, and splitting the peppers, removing the stalks and deseeding. The chilli peppers are then washed, ground and seasoned with salt, garlic and coriander using a pestle and mortar or a manual meat mincer. The harissa is stored in glass or pottery for subsequent use. The cultivation of chilli peppers follows an agrarian calendar that prohibits sowing during certain periods, which are considered unlucky. Chillies are hung on looms and replicas are made from coral to avoid bad luck. The knowledge and skills related to chilli pepper growing are passed on within communities of farmers or through agronomy schools and institutes.”

Tunisia Tours for French Language Educators

Inspired by our visit to the world-famous Bardo Museum in Tunis, we did a little mosaic workshop in the shadow of El Jem, a UNESCO World Heritage site.

From the UNESCO site:
“Dans la petite bourgade d'El Jem s'élèvent les ruines impressionnantes du plus grand colisée d'Afrique du Nord, immense amphithéâtre où pouvaient prendre place 35 000 spectateurs. Cette construction du IIIe siècle illustre l'extension et la grandeur de l'Empire romain.”

☀️ No, it's not Santorini! Do you know where this is?
The Village of Sidi Bou Saïd on the Mediterranean coast of Tunisia was just listed on the UNESCO World Heritage list on July 26, 2026. Vive l'expérience strolled these streets in June with 20 French language educators from the USA, taking in the beautiful views, sampling the bambalounis, smelling the small hand-tied bouquets of jasmine, discovering impressively decorated doors, and even an impromptu song and dance in a local concept store. It was a lovely start to our experience and making connections in Tunisia.

From UNESCO: "The property is a picturesque village perched on a promontory overlooking the Mediterranean Sea, harmoniously integrated into the cliff topography. It developed around the tomb of a Sufi master and saint, known as Sidi Bou Saïd, who lived in the 12th-13th centuries. Through its architectural fabric and urban planning in symbiosis with the natural environment, its recognisable aesthetic created by emblematic colours, and a mystic aura associated with the Sufi spirituality that permeates the site, the property brings together geomorphology, architecture, and spirituality. It has long inspired artists and continues to attract visitors seeking spiritual serenity."
