Unfortunately a couple of the banana trees collapsed due to the rain and weight of the crop meaning we have lots of bananas. Equally our avocado tree is producing lots of avocados so I made this Avocado & Banana Chocolate Cake. Using the instead of butter or oil. A very long bake but it tastes a like Chocolate Fudge Cake.

Read about my experiences of entering Uganda during the pandemic in my blog post from My First Week in Uganda. Good news is these restrictions have currently been lifted although as a result Uganda is seeing a rise in Covid19 like many other countries experienced after lifting restrictions.
