Fresh Straw Mushrooms (Volvariella Volvace)

Currently, Salcedo Farms focuses on the production of Straw Mushrooms or also known as “paddy straw”. Its scientific name Volvariella volvace is commonly grown in South Asia because of its warm and steamy climate. Fresh Straw Mushrooms are not commonly found in the dry supermarkets nationwide for most are already processed and canned. Straw Mushrooms also ranks 3rd in worldwide consumption next to Agaricus bisporus or more commonly known as the common store mushroom and Lentinus edodes or Shiitake Mushrooms.

Fresh Straw Mushrooms can be found in limited marketplaces in Metro Manila. It resembles more of a tan-colored quail eggs. They are harvested in the “egg stage” before its caps have erupted from its confining universal veils. In such conditions that the Straw Mushrooms are purely fresh and are thus unpeeled. Modern Research show that such unopened caps contain a more nutritious balance of amino acids that when opened could supplement an adequate amount/ serving of proteins which is lacking in a regular daily diet.
