Ang Pasulbot (kilala rin bilang sinulbot) ay isang tradisyunal na kakanin o meryenda mula sa probinsya ng Quezon na gawa sa bilog at medyo pinatampok na galapong (glutinous rice flour dough) na niluluto sa matamis na gata.Nagmula ang pangalan nito sa salitang "sulbot" na ibig sabihin ay lumitaw o umusbong, dahil ang mga piraso ng kuwarta ay lumulutang kapag luto na. Kahawig nito ang bilo-bilo o palitaw, ngunit sa halip na pakuluan sa tubig, direkta itong niluluto sa pinaghalong gata at nakakaramelong asukal hanggang sa lumapot ang sarsa."
