MOLE NEGRO

During our upcoming inaugural 2026 Oaxaca tours we will participate in a hands-on experience making the king of moles: Mole Negro!

Together we will learn to prepare from scratch this ancient Oaxacan sauce, under the talented guidance of neighborhood residents in the community of Teotitlán del Valle, about 30 minutes outside Oaxaca City.

This extraordinary day trip will be organized and led by one of our newest culinary collaborators, Chef Fred Jimenez, owner of ¿A Qué te Sabe? (translated to “What does it taste like?), a popular café and cooking school in Oaxaca.

During the 3-hour visit, we observe the authentic, by-hand preparation of the most iconic of Oaxacan recipes. At the end of the process we enjoy the results of of collective labor.

Experience this and an incredible collection of unique Oaxacan activities during our week long immersive tours!

MOLE NEGRO

My first meal. Whenever I descend on a new destination, I inquire about the top 5 dishes and classic preparations for the city and region. Here in Qaxaca, the stand out is MOLE. More on that later!

Invited by a local, we visited one of the more touristic restaurants on the Centro square, next to the Qaxaca cathedral.

Extensive menu, but I just wanted the Chicken Mole Negro with a side of rice. My friend insisted we finish with Mezcal, which is a digestif and helps to digest the intense ingredients of the mole.

As a food photographer, this dish is not the most photogenic, but the flavors made up for it!
