The word "Mellah" (ملاح) comes from the Arabic word "melh" meaning salt.
🧂 Why salt?
In the 16th century, the Jewish quarter in Fes was the first to be officially called Mellah. Jewish families were given land near the royal palace and assigned the task of salting and preserving meat for the sultan's kitchens. Over time, "Mellah" became the general term for Jewish neighborhoods in cities like Marrakech, Casablanca, Essaouira, and Rabat.
