Chicken Tortilla Soup recipe 🌮🍗🥣
Ingredients:

1 tbsp olive oil

1 onion, chopped

2 cloves garlic, minced

1 jalapeño, diced (optional)

1 tsp chili powder

1 tsp cumin

4 cups chicken broth

1 can (14 oz) diced tomatoes

1 can (15 oz) black beans, drained

1 cup corn (fresh or frozen)

2 cups cooked shredded chicken

Salt & pepper to taste

Juice of 1 lime

Toppings: tortilla strips, avocado, cilantro, cheese

Instructions:

In a large pot, heat olive oil and sauté onion, garlic, and jalapeño until soft.

Stir in chili powder and cumin; cook 30 seconds.

Add broth, tomatoes, beans, corn, and chicken. Simmer 20 minutes.

Stir in lime juice and season to taste.

Crockpot Chicken Gnocchi Soup recipe 🍲🐔✨

Ingredients:

1 lb boneless chicken breasts or thighs

1 small onion, chopped

2 carrots, chopped

2 celery stalks, chopped

3 cloves garlic, minced

4 cups chicken broth

1 tsp thyme

Salt & pepper to taste

1 cup half-and-half (or heavy cream)

1 package (16 oz) potato gnocchi

2 cups spinach, chopped

Instructions:

Add chicken, onion, carrots, celery, garlic, broth, thyme, salt, and pepper to the crockpot.

Cook on Low for 6–7 hours or High for 3–4 hours, until chicken is tender.

Shred chicken in the pot, then stir in cream, gnocchi, and spinach.

Cook another 15–20 minutes on High, until gnocchi is tender and soup is creamy.

Salt & pepper to taste

For the Sauce:

2 tbsp butter

1 onion, finely chopped

2 cloves garlic, minced

1 tbsp ginger, grated

1 tbsp tomato paste

1 cup tomato sauce or purée

½ cup heavy cream or coconut milk

1 tsp curry powder or garam masala

Salt to taste

Instructions:

Mix meatball ingredients; form into small balls. Bake at 400°F (200°C) for 18–20 min or until cooked through.

8 oz pasta of choice

1 cup roasted red peppers (from jar or fresh)

½ cup raw cashews (soaked in hot water 15 min, then drained)

½ cup water or vegetable broth

2 tbsp nutritional yeast (optional)

1 tbsp lemon juice

Instructions:

Preheat oven to 425°F (220°C). Toss cauliflower with olive oil, salt, and pepper. Roast 20–25 minutes until golden.

1 tbsp olive oil

4 cups chicken or vegetable broth

1 can (15 oz) white beans, drained and rinsed

2 cups chopped kale

1 cup diced tomatoes (optional)

Salt, pepper & red pepper flakes to taste

Instructions:

In a large pot, heat olive oil and brown sausage, breaking it up as it cooks.

Add onion and garlic; sauté until soft.
