Carnival is all about excess: it’s time to dress up in costume, throw coriandoli (confetti) in the air, and indulge in sweets of all sort: Frittelle, are the most famous sweets of Venice Carnival followed closely in popularity by galani. These sweets begin showing up in pastry shops, bakeries, and snack bars during the weeks leading up to The Venice Carnival and when it’s over, frittelle disappear from the store windows for another year. Frittelle come in a variety of styles, both filled and unfilled like the frittelle veneziane that have no filling, but raisins and pine nuts mixed into the fairly heavy dough after frying, and rolled in granulated sugar. Other types are frittelle filled with eggnog (zabaione), with cream, with apples and with chocolate.
