Today, Air Pilots members, led by Master Richie and Regional Chairman Robert Jones, embarked on a unique behind-the-scenes tour of Cathay Pacific Catering Services—one of the world’s largest and most sophisticated aviation catering facilities. Joining us was COO Jaap Roest, who shared insights into their cutting-edge operations, the challenges of catering to a global audience, and their ambitious sustainability initiatives, including a commitment to achieving net-zero emissions by 2050.
A Taste of Excellence in Aviation Catering
Our members were treated to a fascinating tour of the sprawling facility, witnessing firsthand the meticulous effort that goes into preparing thousands of meals every day for passengers of every class. From First Class luxury dining to Economy meals crafted with precision, Cathay’s catering team delivers excellence at 35,000 feet.
It was inspiring to see how the facility accommodates diverse dietary needs, including vegetarian, halal, kosher, and other special meal requirements. The attention to detail was impeccable—imagine designing dishes that look good, taste great, and remain fresh even after hours in an aircraft galley!

The highlight of our visit? The tasting menu, of course! Prepared by the talented Wayne Herrington, Executive Sous Chef of Cathay Dining, we had the privilege of sampling the newest menu developed in partnership with Michelin-starred restaurant Louise.
The lineup was nothing short of extraordinary:
-Lamb Shoulder Confit with Spiced Jus – Tender, flavorful, and the kind of dish you wish came with unlimited refills.
-Steamed Halibut with Chorizo Sauce – A perfect balance of lightness and rich flavor. If seafood could sing, this would be a symphony.
-Cathay Signature Wok-Fried Seafood in Lobster Broth – A show-stopping dish that reminded us why Cathay’s culinary reputation is world-renowned.
Each dish was a testament to the team's dedication to creating exceptional meals that rival dining experiences on the ground. The flavors, textures, and presentation exceeded all expectations, leaving us both inspired and full.
