Do you know that apart from beef rice noodle, Pho has another version?

Yes, there is another Pho version and that is the rolled Pho. “Banh pho”- the flat thin sheet of steamed rice cake (which is cut into noodles) is used to roll outside various of herbs (mainly cilantro, mustard leaf and lettuce), thinly sliced beef that has been cooked with garlic and generous amounts of pepper. It is served cold with a bowl of fish sauce, garlic, carrots, radish, vinegar, boiled water, chili and some sugar for dipping. This dish has become a part of Hanoi cuisine for more than 2 decades now.

According to stories, there was one street vendor at the corner of Ngu Xa and Nguyen Khac Hieu Street in Hanoi which sold traditional Vietnamese Pho for diners who were watching football late in the evening. One day, the broth ran out and there were some uncut noodles left. Therefore, to satisfy the hunger of customers, the man invented a new dish. He pressed the noodles like rice paper roll and then added the beef into the roll with herbs. When served, the rolls were dipped in the Vietnamese dipping sauce with sugar, vinegar, water, garlic and fish sauce. Surprisingly, the visitors were interested in this new food. After that, the shop changed to new style of Pho.

In the last 20 years, rolled Pho has become a special choice of Hanoi citizens. There has been some luxury restaurants selling it and the visitors are coming more frequently. The restaurants that sell rolled Pho usually also provide some other Pho dishes for the customers such as fried Pho with beef, deep fried Pho with eggs, crispy Pho; but guests would always choose rolled Pho as their first course.👍

🦀 NEM CUA BỂ HẢI PHÒNG - HAI PHONG CRAB SPRING ROLLS 🦀

The usual shape of Vietnamese deep-fried spring rolls is the tube shape. However, there is another shape of spring rolls: square. This square spring rolls is a famous dish from Hai Phong, a coastal province of Vietnam that is famous for many sea-food dishes.

Inside this Crab square spring rolls, there are Hai Phong fresh sea-crabs, minced pork, egg, mushroom, onion, vermicelli, and fungus.
During the cooking, the chefs have to choose the the really fresh crab, boil it and take out crabmeat. That crabmeat is mixed with pork and other ingredients. After all are mixed, the chefs will roll it with the rice paper. When frying, the crab spring rolls have to deep in boiled oil. As the outer of those spring rolls has turned into yellow brown color and has s crispy look, they will be taken out and served on dishes.

To make the dip, people mostly use Cat Hai fish sauce then mix with sugar, lemon, garlic, and chili. The roll is served with vermicelli, cucumber, salad, and fresh herbs.

😋 BÁNH CUỐN - VIETNAMESE STEAMED RICE ROLLS 😋

Banh cuon is a very light crepe often with ground pork, minced wood ear mushroom, and onions and eaten with Vietnamese ham (cha lua), steamed beansprouts, and cucumbers. Another variation arising from a village in Northern Vietnam famous for their banh cuon is called banh cuon “Thanh Tri” a style where the crepe is not rolled but kept in sheets without any filling, and sprinkled with fried onions.

Vietnamese banh cuon is different from the rice rolls found at Chinese dim sum, cheong fun, because the banh cuon crepe is extremely thin and delicate and not topped with sweet soy sauce. The reason for this thinness is the process of how it’s made. Banh cuon can be made extremely thin because it’s steamed over a fabric covered pot which can quickly cook the rice flour, keeping it moist and workable.

A very thin layer of batter is poured on to the cloth and evenly spread and steams paper thin, and in less than a minute, a flat and flexible bamboo stick is used to lift off the delicate rice crepe. Then lay the crepe to your large aluminum work tray that has been lightly brushed with oil. Add a small amount of filling (including: ground pork, minced wood ear mushroom, and onions) into the center of the crepe and spread it out thinly. Then fold over the sides and place in a serving tray. You can make many banh cuon and stack them on top of one another and it won’t stick due to the very lightly oiled surface that you’re working on. Repeat again and again.

😋 MUNG BEAN PUDDING - VIETNAMESE CHE KHO 😋

To many generations in Hanoi, mung bean pudding has become a familiar dish which always presents on the ancestors’ altar at New Year’s Eve. Mung bean pudding is not a delicacy but a dessert, its ingredients contain a precious medicine for gastrointestinal diseases – the cardamom.
Cardamom is a highly aromatic spice that is most commonly planted in mountainous provinces of Viet Nam, its flavor is slightly sweet and hot, very suitable to combine with a wide range of other ingredients from poultry, vegetable to cake. And in the dish of mung bean pudding, the hot cardamom goes perfectly with the cool mung bean.
Mung bean pudding is made from dried mung bean, sugar, grapefruit extract and cardamom following a secret portion that only skillful and experienced cookers know and that is the reason why ancient mothers always took this dish to test the ingenuity of their future daughter.
