Classic Three-Bean Salad

Ingredients
• 1 can kidney beans, drained and rinsed
• 1 can chickpeas, drained and rinsed
• 1 can green beans (or 1½ cups blanched fresh green beans), chopped
• ¼ cup red onion, finely diced
• ½ cup cherry tomatoes, halved
• 2–3 tbsp chopped fresh parsley

Dressing
• 3 tbsp olive oil
• 1½ tbsp red wine vinegar (or lemon juice)
• 1 tsp Dijon mustard
• 1 tsp honey or maple syrup
• Salt and black pepper to taste

Instructions
1. In a large bowl, combine beans, onion, tomatoes, and parsley.
2. Whisk dressing ingredients separately.
3. Pour over salad and toss well.
4. Chill at least 30 minutes before serving.
