Morocco tends to get reduced to its most famous version - the rooftop riad, the market stalls, the rose-pink walls of Marrakech. Which is fair, because Marrakech is wonderful. But it's about four percent of what Morocco actually is.

Fes is older, denser, stranger - home to the world's largest medieval medina, where the tanneries still run in the same stone vats they've used for a thousand years. Further south, the road through the Draa Valley leads past kasbahs and palmeries to Erg Chigaga: Morocco's largest dune sea, hours from anywhere, and nothing like the dunes that appear in most Morocco photos. Then there's the Atlas - Berber villages and saffron farms with snow on the peaks - and the Atlantic coast around Essaouira, a fortified port town with a fishing harbour and a wind that makes the whole place feel alive.

The arch at Land's End is the Los Cabos everyone knows. Drive an hour in any direction and you'll find a very different one.

On the East Cape, a 20,000-year-old reef at Cabo Pulmo is busier with turtles and rays than it's been in decades, all because a small fishing village decided to protect it. Inland, lunch at Flora Farms is served among the rows the food was grown in. Up the Pacific coast in Todos Santos, humpbacks surface close to shore from December to April.

Kenya people talk about Elewana Loisaba on the Laikipia Plateau - the star beds above the canopy, the wild dog sightings, the feeling of sitting very still on a night drive while something extraordinary moves past. Heritage Le Telfair Golf & Wellness Resort sits on Mauritius' south coast, where the island feels a little wilder – green hills rolling down to a coral-fringed lagoon, and the Citronniers River winding through the gardens to meet the sea.

This was once a sugar estate, home in the 1800s to the Irish naturalist Charles Telfair, and the past is never far away: the old sugar mill still stands at the entrance, and evenings belong to Le Château de Bel Ombre, the restored plantation house, with drinks beneath one of the island's largest banyan trees before dinner on the veranda.
