Pathiri & Beef Curry Recipe – Part 1 🥩🔥

Rich, spicy, and packed with authentic Kerala flavours!

For this beef curry, I use 1.2 kg beef steak, cut into bite-sized pieces. In a pressure cooker, add:

🌶️ 1½ heaped tbsp chilli powder
🌿 ½ tsp turmeric powder
🌿 1 tbsp coriander powder
✨ ½ tsp garam masala
🧂 Salt to taste
🍋 Juice of ½ lemon
🥥 A drizzle of coconut oil
🌶️ 4 green chillies
🍅 2 tomatoes or 200g canned tomatoes

Mix everything well, close the cooker, and cook for 5 whistles.

In a pan, heat 2 tbsp coconut oil and add:

🌿 1 tsp fennel seeds
✨ 1 cardamom pod
✨ 1 small cinnamon stick
🍃 1 bay leaf

Sauté for a few seconds, then add 3 sliced onions and cook until golden brown. Add the cooked beef along with the stock and simmer for 15 minutes. Finish with fresh curry leaves.

Serve hot with pathiri and enjoy! ❤️

🔥 Trending Spicy Creamy Loaded Chips – My Own Twist! 🤤

Tried the viral loaded chips trend and added my own touch with some crispy chicken! 🍗✨

Recipe:
• 100g boneless chicken, cut into bite-sized pieces
• Season with paprika, oregano, lemon juice, salt, and pepper
• Cook in a pan with a small k**b of butter until golden and crispy

In the same pan:
• Sauté 3–4 finely chopped garlic cloves
• Add 1 tsp chilli flakes, a pinch of paprika, and oregano
• Once fragrant, add fresh cream
• Optional: Add 3 slices of cheese for extra creaminess 🧀
• Cook until the sauce thickens

Add your favorite plain salted chips, toss well, and transfer to a bowl. Top with chopped onions, fresh herbs (parsley, coriander, or your favorite greens), and enjoy! 😍

🥭 Easy No-Churn Mango Ice Cream 🍨✨

Creamy, fruity, and made with just a few ingredients — this homemade mango ice cream is the perfect summer dessert ☀️💛 No ice cream machine needed!

Ingredients:
• 600 ml heavy cream / double cream / whipping cream
• ½ cup powdered sugar
• 700 g sweet mango pulp (Kesar mango works amazing 🥭)

Method:

1. In a chilled bowl, whip the cream and powdered sugar until soft peaks form.
2. Add the mango pulp and gently fold using the cut-and-fold method.
3. Transfer the mixture into a container (around 2.2 L).
4. Add a little extra mango pulp on top and create beautiful swirls using a spoon or skewer ✨
5. Freeze until set.
6. Scoop, add your favourite toppings, and enjoy!

Easy Chocolate Mug Lava Cake

Made this super easy chocolate mug cake using a 300ml mug, and it turned out so soft, gooey, and chocolatey 🤎

Ingredients:
• 4 tbsp all-purpose flour
• 2 tbsp cocoa powder
• 3 tbsp sugar
• A pinch of salt
• 3 tbsp milk
• 2 tbsp oil or melted butter
• 1 small egg
• 2 tbsp chocolate chips or any chocolate piece for the lava center 🍫
(I used a small piece of 70% dark chocolate, but white chocolate or any favorite chocolate works too!)

Method:

1. In a bowl, whisk together sugar, egg, and oil.
2. Add flour, cocoa powder, and a pinch of salt. Mix gently — don’t overmix.
3. Pour the batter into your mug and place the chocolate piece in the center.
4. Steam in a cooker with water for about 15 minutes.
5. Don’t overcook! It may look slightly undercooked at first, but that’s what gives the perfect lava texture 😍
6. Let it cool for a few minutes, then scoop and enjoy!

Microwave method:
Microwave for about 50 seconds for a quick version ⚡

Easy Tomato Rice Recipe
Into a pan, add 4 tablespoons of cooking oil (I used virgin olive oil). Once heated, add your favorite whole spices like cinnamon sticks, star anise, cloves, cardamom, and bay leaves.

Add 3–4 finely chopped garlic cloves and a small piece of finely chopped ginger. Sauté for a few seconds until fragrant.

Next, add 1 finely chopped onion and cook until golden brown. Add 3 finely chopped tomatoes and cook until soft and paste-like.

Now add:
✨ 1 tsp chilli powder
✨ 1 tsp black pepper powder
✨ ¼ tsp turmeric powder

Add a splash of water and cook until the spices are nicely roasted. Then add 2 tablespoons of yoghurt or curd and mix well. Finish with a squeeze of lemon juice.

Add 4–5 cups of cooked rice (I used boiled basmati rice, but any rice works perfectly). Mix everything together well. Finally, add some finely chopped coriander and give it a final mix. 🌿

Serve hot with yoghurt or your favorite side dish. 😍

🥭 Instant Ripe Mango Pickle / Pazhutha Manga Achar 🥭

Super easy, quick, and absolutely delicious! Perfect with rice, dosa, chapati, or any of your favourite dishes ❤️

✨ Recipe:

Cut 1 fully ripe mango into small cubes and keep aside.

Heat 4 tbsp oil in a pan (sesame oil / nalla ennai gives the best flavour, but you can use any cooking oil). Add 1 tsp mustard seeds and let them crackle.

Add 3–4 cloves finely chopped garlic and a small piece of chopped ginger. Sauté well until aromatic.

Add 2½ tsp Kashmiri chilli powder and roast lightly on low flame until the colour turns deep red.

Now add the mango pieces, salt as needed, and 2 tbsp vinegar. Mix everything well and cook lightly for a few minutes. Do not overcook — the mango should stay slightly firm.

Once it reaches a glossy pickle consistency, transfer to a clean glass jar.

😍 You can enjoy it immediately, but it tastes even better after resting for a while!
