Most visitors skip Sauternes. They come to Bordeaux for the reds, the Médoc, Saint-Émilion, the famous names. Sweet wine doesn't make the list.

When actually, Sauternes is one of the most labor-intensive wines in the world. The complexity rivals any red. The aging potential is measured in decades, not years. And the estates are quieter, more personal, easier to visit, just like one of our favorites, Château Sigalas Rabaud 🥰

We include a visit to Sauternes on most itineraries. The reaction is almost always the same: "Why didn't I know about this?" If you've never visited a Sauternes estate, you're missing one of Bordeaux's most memorable experiences.

Which vessel makes the best wine? Trick question. They all do, depending on what you're trying to achieve.

- Stainless steel for precision and purity.
- Oak foudres for gentle aging and structure.
- Clay amphorae for texture without oak flavor.

Bordeaux's most interesting producers use more than one. They ferment a parcel in clay, age another in large oak, keep a third in steel, then blend. The final wine is a decision, not an accident. That's what makes cellar visits worth the time. You see the thinking, not just the result.

Some châteaux are actual castles. Some are farmhouses. Some look like they belong in a film. Only one is Château Pontet-Canet 😍

What makes it a château isn't the building, it's the vineyard attached to it. The estate. The land. In Bordeaux, the land is everything.

We had a lovely cooking class with Chef Dan and Erica after a private tour of the Capucin Market in St-Michel! Winter veggies, Farm Chicken, and four sauces all à la française paired with Sauternes and Fronsac wines never tasted so good. 🤌🤌
