🇬🇧 Galvanting Edinburgh, Scotland
Edinburgh felt like stepping straight into a living history book—equal parts stunning, eerie, and unforgettable.

We made the trip out to Loch Ness chasing the legend… and, as expected, no Nessy sightings. Not even a hint. But the Highlands themselves? Absolutely unreal. Rolling hills, low-hanging mist, and those iconic shaggy Highland cows—what Marcia calls the “Moo Cows.” She was obsessed. No exaggeration, that moment somehow turned into a full-blown theme later—our home décor now proudly reflects our appreciation for Scottish cattle.

Back in the city, we walked the historic Royal Mile, surrounded by architecture that honestly doesn’t look real. Every building feels ancient, layered, and intentional—like it has a story carved into it. At the top of it all sits the iconic Edinburgh Castle, perched high above the city. That’s the one you’re thinking of—the famous fortress overlooking everything. It’s massive, dominant, and impossible to ignore.

Then we went below the city… and that’s where things took a turn.

We explored the underground vaults—remnants of a buried world beneath Edinburgh, including places like Mary King's Close. Dark, narrow, and genuinely unsettling. You can feel the weight of history down there—plague, death, isolation. Whether you believe in the paranormal or not, it’s one of those places that makes you pause.

We also got a deep dive into Scotland’s darker history—torture methods, executions, myths, and the brutal realities that shaped the legends. It’s not polished or softened, and that’s exactly why it hits the way it does. Add in visits to some of the oldest churches in the area, and the entire experience starts to feel heavy—in a powerful, reflective way.

Food-wise? We’ll be honest—it didn’t stand out. But Edinburgh isn’t about the food. It’s about the history, and on that front, it delivers at a level that’s hard to match.

Somehow, right in the middle of all this, we ended up seeing Saturday Night Fever musical. Completely random. Didn’t fit the vibe at all. And yet… it was a blast.

Final Take

Edinburgh is one of those rare places where history isn’t just preserved—it’s alive. Above ground, below ground, in the castles, in the streets… everywhere you turn, there’s another layer.

And if you leave without wanting a Highland cow of your own… you missed something. 🐄

Copenhagen hit different. Castles, history, and streets that feel lived in—not staged—mixed with places like Tivoli Gardens that bring pure energy and life.

But what really stood out wasn’t just the beauty—it was how everything actually works. Clean trains, safe streets, and a city that feels like it’s built for people, not chaos.

We even had a medical emergency while we were there, and instead of panic, it was handled quickly, professionally, and without the financial gut punch you’d expect back home.

That moment alone changed our perspective—Copenhagen doesn’t just show you a good time, it quietly shows you how things could be.

Tulum and Cozumel didn’t just meet expectations… they blew past them.

Street food that hits different—real flavor, real culture.

Music, energy, life everywhere you turn.

Cold drinks always within reach—no stress, just vibes.

Then we slowed it down—
couples massage, full experience, all the bells and whistles.
Reset. Recharge. Back to it.

Because the ocean was calling.
Sharks.
Sea turtles.
Whales.

We didn’t just see it—we swam through it.

Shipwrecks beneath us, open ocean all around us.

Ziplining through the jungle.
ATVs tearing through the dirt.
Wildlife so close it didn’t feel like a vacation—it felt raw and real.

Tulum brought the vibe.
Cozumel brought the depth.

This wasn’t a trip. This was a reminder—
life is still out there waiting for you.

🇮🇹 Galvanting Around the World: Italy Edition

Italy didn’t just meet expectations…
It blew them away.

From the cliffs of the Amalfi Coast to the ancient streets of Pompeii, every step felt like walking through a living story.

Standing inside the Colosseum, you can’t help but feel the weight of history. It’s one thing to read about it… it’s another to stand there and realize how much has happened on that ground.

Pompeii was something else entirely.
A city frozen in time—preserved by tragedy, but still telling its story thousands of years later. It gives you a perspective you just can’t get from a book.

We also visited Vatican City.
We didn’t take many pictures—and honestly, that felt right. Some places aren’t meant to be experienced through a camera.

For the record, we’re not personally religious. But we have a deep respect for learning about different beliefs, cultures, and the history behind them. And standing in a place with that much global influence and history… you feel it, whether you’re religious or not.

And then there’s the food.
Not just eating it… understanding it.
We learned how the volcanic soil from Mount Vesuvius plays a huge role in what makes everything taste so different. The olive oils, the tomatoes, the lemons—there’s a richness and depth you don’t find anywhere else.

But the best part?
We didn’t just eat it—we learned to make it.

From scratch.
Pizza.
Fresh pastas.
Tiramisu.

There’s something different about food when you understand the process behind it. It hits different when you’ve made it with your own hands.

Italy isn’t just a place you visit.
It’s something you experience—with every step, every bite, and every story.

Galvanting Belize 🇧🇿

Belize is one of those places that somehow still flies under the radar, but it’s absolutely incredible.

Crystal-clear Caribbean water. Small tropical islands scattered everywhere. Jungle full of exotic animals. And for travelers from the U.S., it’s easy because everyone speaks English.

You can spend one day snorkeling with sharks and stingrays, another day ziplining through the jungle canopy, and the next exploring caves and cenotes carved deep into the earth.

And the food… wow.

Fresh seafood, coconut rice and beans, tropical fruit, and flavors influenced by Caribbean, Creole, and Mayan cultures.

It’s the kind of place where you can start the morning in the ocean, spend the afternoon in the jungle, and end the day watching the sunset over the water.

Belize is equal parts adventure and paradise.

In Panama and many Spanish-speaking countries, people eat 12 grapes at midnight on New Year’s Eve.

Each grape represents one month of the upcoming year.

How the tradition works
As the clock strikes midnight (often with 12 bell chimes), you eat one grape for each chime.

While eating each grape, you make a wish or intention for that month of the new year.

So:
🍇 Grape 1 = January
🍇 Grape 2 = February

🍇 Grape 12 = December
If you manage to eat all 12 grapes before the chimes finish, it’s believed you’ll have good luck and prosperity for the year.

Where the tradition came from
The custom actually started in Spain around 1909. Spanish grape farmers had a huge grape harvest and promoted the idea of eating grapes at midnight to sell the surplus.

The idea caught on culturally and spread throughout Latin America, including:
