Hearty Red Lentil Soup
(Beef-Style Flavour, No Meat)
Serves: 4–6
Total Time: ~35–40 minutes
Ingredients
1 cup Canadian Organic Splendor Garden Red Lentils, rinsed
1 tbsp Canadian Organic Splendor Garden Beef Style Soup Mix
1 tbsp olive oil or avocado oil
1 medium onion, diced
2 carrots, chopped
2 celery stalks, chopped
1 red bell pepper, diced (optional)
2 cloves garlic, minced
1 tsp paprika (optional, for warmth)
½ tsp ground black pepper
6 cups water
1 cup diced tomatoes (fresh or canned)
1 cup chopped spinach or kale (optional)
Salt to taste (if needed)
Fresh parsley or green onion for garnish
Instructions
1. Sauté the vegetables
In a large pot, heat oil over medium heat. Add onion, carrots, celery, and bell pepper. Sauté for 5–6 minutes until softened. Add garlic and cook 30 seconds more.
2. Build the flavour
Stir in the Splendor Garden Beef Style Soup Mix and paprika. Toast gently for about 1 minute to release the spices.
3. Add lentils & liquid
Add rinsed red lentils, water or vegetable broth, and diced tomatoes. Stir well.
4. Simmer
Bring to a gentle boil, then reduce heat to low. Cover and simmer for 20–25 minutes, until lentils are soft and the soup thickens naturally.
5. Finish the soup
Stir in spinach or kale and cook 2–3 minutes until wilted. Taste and adjust seasoning if needed.
6. Serve
Ladle into bowls and garnish with parsley or green onion.
