Bananas are harvested mature but unripe and moved through a refrigerated supply chain. During storage and transport they are typically kept between 13°C and 14°C. This temperature does not freeze the fruit. It slows its natural ripening while it travels. Closer to their destination, bananas enter specialized ripening rooms where temperature, humidity, airflow and ethylene gas are carefully managed. This begins ripening at the right time so they reach grocery shelves at the intended stage.
