Last June I was sitting in the left side of a ScotRail train from Aberdeen to Glasgow and just prior to arriving into Stirling this amazing structure stood high on a hill.

After some quick Googling, I learnt it was The National Wallace Monument. I vowed to return and visit.

That time was today, and wow, what an experience. The 3 internal display levels before reaching the crown provided well earned breaks for your legs. And the views from the Crown… Spectacular (even if it was windy & freezing).

A massive shout out to Sally who was operating the shuttle bus to the monument from the car park. An absolute wealth of knowledge and a real credit to the team working there.

I know I have posted about this before, but what beats the best breakfast item in the world…

Having multiple locations serving the same awesomeness, Jääkellarin Lohta (Salt Cured Salmon).

Usually with more Salmon, or a Salmon Omelette.

Helsinki, Oulu & Tampere.

And after eating such delicious morsels of yumminess, I end up looking like a Moomin… with a very happy belly. MoominAussie…

Normally when you think of eating in Japan, the first thing that comes to mind is Sushi, Ramen, Soba Noodles etc.

Well you will also find some of the best Hamburgers in the world.

Fresh buns, Fresh Produce, Great Quality Meat & Cheese, plus the Fries were epic.

And conveniently a few doors up from my preferred Tokyo hotel, Mercure Tokyo Haneda Airport.

It is always a blessing to be able to dine at a new restaurant on opening night.

The excitement amongst the staff was obvious, and so was the nervous energy which shows they care.

The display kitchen was very well set up, with the Pizza Oven front & centre.

Focaccia with Olive Oil & Balsamic Vinegar to start, followed by Cacio e Pepe, Fresh Pasta with Pecorino Cheese & Black Pepper…

Delizioso - Herkullinen.

One of the highlights was seeing a specially designed cart go from table to table serving pasta from a wheel of Parmesan Cheese served with shavings of dried Reindeer Meat.

Just over a month ago I purchased these 2 items to enhance my Carry-On capabilities when travelling.

Having just travelled almost 36hrs (including stopovers), on 3 flights they did not disappoint. I even had other passengers at London Heathrow and also upon arriving at Aberdeen ask what brand they were.

The Bellroy Transit Carry-On, and the Tokyo Messenger Bag, both in Everglade (because Green Rocks) work together seamlessly.

The rolling action of the Hinomoto wheels makes moving the bags effortless.

All that is needed now is a matching Checked size bag…
