Pan-Seared Snapper with a Citrus Herb Sauce
Ingredients:
4 snapper fillets (skin on)
2 tablespoons olive oil
Salt and pepper to taste
1 tablespoon butter
For the Citrus Herb Sauce:
1/2 cup fresh orange juice (about 1 orange)
1/4 cup fresh lemon juice (about 1 lemon)
2 tablespoons honey or maple syrup (optional, for sweetness)
2 garlic cloves, minced
2 tablespoons fresh parsley, chopped
1 tablespoon fresh basil, chopped
1 tablespoon fresh thyme leaves
1 tablespoon Dijon mustard
Salt and pepper to taste
Instructions:
1. Prepare the snapper fillets:
Pat the snapper fillets dry with paper towels. This helps get a crispy skin when searing.
Season both sides of the fillets generously with salt and pepper.
2. Cook the snapper:
Heat olive oil in a large pan over medium-high heat.
Once the oil is hot, place the snapper fillets skin-side down. Cook for about 3-4 minutes until the skin is crispy and golden.
Flip the fillets over and add a tablespoon of butter. Cook for an additional 2-3 minutes, or until the fish is cooked through (it should flake easily with a fork).
Remove the snapper from the pan and set aside.
3. Make the citrus herb sauce:
In the same pan , reduce the heat to medium.
Add minced garlic and sautรฉ for about 1 minute until fragrant.
Pour in the fresh orange juice and lemon juice. Stir in honey or maple syrup (if using), Dijon mustard, and a pinch of salt and pepper.
Let the sauce simmer for 2-3 minutes until it slightly thickens.
Stir in the fresh herbs (parsley, basil, thyme) and give it a final stir.
4. Serve:
Place the cooked snapper fillets on plates and drizzle with the citrus herb sauce.
Serve with your favorite side dishes (like roasted vegetables, mashed potatoes, or a fresh salad).
Tips:
* You can make this recipe with any white fish if snapper isn't available.
* For extra flavour, you can add a bit of zest from the orange or lemon into the sauce.
* If you like a little kick, add a dash of chili flakes or a small minced chili to the sauce.
