It is the highest quality because, unlike other suppliers who rely on multiple entities to handle the product before it reaches you, we take possession of our product directly from the boats at the wharf and can ensure our HACCP accredited strict quality controls apply immediately the fish are landed right through to when you are supplied with the product.

Yellow Belly Flounder (Rhombosolea leporina)

Flat as a pancake and perfectly camouflaged against the seafloor, Yellow Belly Flounder is certainly one of the most unusual fish on the menu.
It begins life swimming upright like a typical fish, but as it develops, one eye gradually migrates across its head, allowing it to lie flat on the seabed with both eyes peering upwards. This remarkable adaptation makes it a highly effective - albeit quirky-looking - ambush predator, feeding on small crustaceans, worms and other bottom-dwelling creatures.

🍽️ Our serving suggestion
Yellow Belly Flounder is prized for its delicate flavour and fine-textured white flesh. It is also wonderfully easy to cook. Lightly score both sides with a sharp knife, spread some garlic butter & seasoning into the cuts and bake in the oven until tender. Add a squeeze of lemon and the flesh is ready to pick off the bones. Throw in a crisp salad and / or some hot chips – and you are ready to eat.

Our fresh display is stocked with delicious fresh Yellow Belly Flounder, Atlantic salmon fillets, beautiful fresh Gummy Shark, Flathead, live Mussels, Oysters and another delicacy – Albacore Tuna. In the freezers you will find all your favourite local fish, snap-frozen to perfection alongside a variety of prawns, squid, cooked lobster and more.

A line of fishing boats tied up at the wharf usually tells a story - when bad weather rolls through, vessels like the Game Reason, Zeehan and Moira Elizabeth often have little choice but to stay safely in port.

Fortunately, unfavourable weather doesn't mean no fish. During fair weather, we source a wide variety of local fish and snap-freeze to lock in freshness. That means many of your favourite local fish are available year-round, regardless of what the weather is doing.
And for those still chasing fresh seafood, we source fish, oysters and other favourites from the Melbourne Seafood Centre every week.

Australian Giant Spider Crab (Leptomithrax gaimardii)

With its long, spiny legs and prehistoric appearance, the Spider Crab may not look particularly edible - but don't let that fool you.
Native to the cool waters of south-eastern Australia, Spider Crabs are famous for their spectacular winter aggregations. During what has become known as the "March of the Spider Crabs", thousands gather in shallow coastal waters to moult their shells and seek safety in numbers.

🍽️ Our serving suggestion

Deshelling Spider Crab legs is a wonderfully hands-on experience, best tackled with a good pair of kitchen scissors and perhaps a little patience. The reward for your efforts is sweet, delicate crab meat, expertly cooked to perfection by your friendly Food Scientist, Eugene.

If you somehow manage not to eat it all during the deshelling process, the tender meat is beautiful folded through pasta, added to a fresh seafood salad, or simply enjoyed with a squeeze of lemon, a dollop of mayonnaise and some sourdough bread.

Orange Roughy (Hoplostethus atlanticus)

It looks like a fish straight out of a Pixar movie, but Orange Roughy tells a serious story. This deep-water species was once severely depleted but decades of careful management, scientific research and industry commitment have helped rebuild key stocks, with several fisheries now MSC certified. It's proof that sustainable seafood isn't just an idea – it can be achieved when everyone pulls in the same direction.

With its snow-white flesh, delicate texture and clean flavour, Orange Roughy is one of the easiest fish to cook and enjoy. It readily takes on the flavours of your favourite herbs, spices and marinades while remaining moist and tender.

🍽️ Our serving suggestion

Curious to try this famous fish for ourselves, last night Eugene lightly dusted the fillets with flour and seasoning before pan-frying them in olive oil until golden. He paired them with a creamy sauce of shallots, capsicum, garlic, chilli, herbs and white wine, served over fluffy rice. The clean, delicate flavour of the Orange Roughy soaked up the sauce beautifully and made for a cracking meal.
