Harvest day. Ten years of waiting, and the cherries finally came off red.

Pete got the team in to pick. They come off the branch looking like holly, which makes the timing almost too neat.

Now the decision: sun-dried natural, washed, or honey process. Same tree, three completely different cups.

Why does cafe coffee taste better than at home? 🏠

Some of it is the machinery, group head design, a commercial pump holding flow steady right across the shot. Some of it is volume, a cafe grinds fresh all day, in the hands of someone pulling hundreds of shots.

There used to be a big gap. There's less of one now. Plenty of home baristas have gone right into the science of it and are producing genuinely great cups. ☕️

Ten years. One tree. Three cups. ☕️🌳

Pete's been trying to get a single cup of coffee off this thing for about a decade. Hot summers, frosty winters, the climate here kills coffee trees.

This year it finally gave up enough cherries. Dried a few different ways, into the small roaster, and we'll see what comes out.

Cheapest fix in your whole coffee setup, and it isn't a machine. 🚨

If you're dosing by eye, the amount going into the basket moves every morning and so does the coffee coming out. That's the entire mystery.

Scales. Weigh it, find the number that works, hit it every day. ⚖️

Fifty kilos, most mornings, before anyone's awake. ☀️

Halfway through a roast the drying phase is done and the sugars start to caramelise. From there it's colour, sound and smell. Waiting for the beans to go uniform, listening for the crack, watching the moisture come off. ☕️

Judgement, not a timer. ⏲️

Nothing's changed except the weather, and your coffee tastes different. ☀️🤷‍♀️

Warmer, more humid air changes the way the beans grind, and that changes the way the shot pours. Same setting, different result.

So readjust the grinder for the season and expect it to keep moving. Check it again whenever the weather turns.

Clothes, toothbrush, the good hat, all replaceable at the servo if it comes to it. The beans and the brewer are the bit worth planning around.

Watermelon, lychee and white chocolate. In a coffee. ☕️

El Anona is a Typica microlot from Jose de la Cruz Mejia Morales, grown at 1,700 metres on the slopes of Montecillos in Honduras. Picked and sealed the same day for anaerobic fermentation, washed clean, then dried slowly on a solar dryer behind his house and turned by hand the whole way through.

Juicy and floral, finishing soft and sweet. Outstanding as a filter. 🙌
