*** PEANUT BUTTER & TOMATO Dried Kapenta - Recipe ***
Ingredients:
• 1 - 100g Hozelock kapenta packet(soaked for 10mins to remove excess salt)
• 2 - large ripe tomatoes, grated
• 1 - large leek, sliced
• 3 - dessert spoons peanut butter or according to taste
Method:
In a medium sized sauce pan, sautee the leek and add the grated tomatoes.
Simmer for a minute.
Fold in the kapenta, whilst blending in the peanut butter.
Simmer for 20 - 30minutes or until cooked .
Constantly stir in a folding manner to ensure even cooking.
Serve, with starch and greens of choice.
