Our B&B has been an amazing success. Fully booked and with great reviews week after week. But with a heavy heart we have to sell our villa sooner than planned. Health issues make it difficult to continue. We have decided to move on and give other owners a chance. This morning our guests have Requeijão cheese. A highly valued product due to its high protein and low fat content. Requeijão is made from the whey that is produced when cheese is made.

This whey is placed near a heat source and the water is slowly drained off with constant one-way agitation. After stirring, the temperature quickly rises to 96 °C, after which the proteins (lacto-albumin and lacto-globulin) precipitate through coagulation and form 'flakes'. Then they are removed by skimming or sifting. Traditionally, these flakes were collected in small baskets made of thin chestnut branches, known as 'acafates'. The ´cottage cheese´ is then ready to eat.

The cheese was packaged in the oldest form of packaging: wrapped in cabbage leaves and transported in wicker baskets. It remained a local product for a long time due to the fact that it would quickly spoil during transport. Today, this cheese is popular all over the country and in Brasil and is highly valued as an accompaniment to many traditional dishes and as a basic ingredient in regional pastries, puddings and cakes. It is eaten fresh with a pinch of salt and pepper, or mixed as a dessert with honey, nuts or traditional doce de abóbora de doce (sweet pumpkin marmelade).

Today we serve the traditional Folar de Folhas (also known as folar de Olhão). Folar is a traditional Portuguese bread served at Easter. The recipe varies from region to region and it may be sweet or savory. During Easter festivities, godchildren usually bring a bouquet of violets to their godmother on Palm Sunday and in return, the godparents offer, on Easter Sunday, a folar. Folar is sometimes served with a boiled egg, that symbolically represents rebirth and the Resurrection.

What sets this sweet treat apart from the others is its unusual composition: it has superimposed layers interspersed with a syrup composed of sugar, butter and generous amounts of cinnamon and aniseed. During the baking process, the butter and sugar melt, with some of the sweet liquid being absorbed by the bread and some bubbling up to create a crunchy caramelized coating on the outside. This caramelized layer leaves dry out over the days but does not solidify and, therefore, the dough remains moist and delicious. No wonder it is now considered one of the “7 Sweet Wonders of Portugal”.

This type of bread, which contains ingredients forbidden during Lent, has long been associated with Easter and the feasting that occurs on this holiday. “After the winter months and the long fast during Lent, the Easter brings an intense activity in terms of culinary preparations and the exchange of cakes, namely the folares,” writes Mouette Barboff in her book A Tradição do Pão em Portugal (Bread in Portugal). At Charm of the Algarve our favorite might be the one made by the small bakery João Mendes & Rita. Due to its growing popularity, this specialty can now be found year round. But around Easter, when it’s traditionally eaten, bakeries producing folares begin working non-stop to fill all the orders – the team at João Mendes & Rita are baking around 1,600 every day.

Healthy, hearty and delicious creation, all this applies to our special Bircher muesli. Maximilian Oskar Bircher Benner spread the Bircher Muesli more than 150 years ago. On a hike in his native Switzerland, the doctor was served a muesli mixture that was already very similar to the Bircher Muesli. His enthusiasm was so great that in 1900 he created his own perfected mixture and thus the famous Bircher muesli. From then on, Dr. Bircher Benner served this healthy breakfast to his patients every day as a healthy dietary dish. And here at Charm of the Algarve we love a healthy and delicious breakfast so today we served homemade Bircher Muesli.

Max Bircher Benner must have found the perfect nutrient composition for his muesli creation. The enormous variety of ingredients makes Bircher muesli a real all-round provider for the body. The apples, for example, provide plenty of vitamins and minerals. The cereals provide the body with the necessary fibre for healthy digestion. Nuts are full of valuable unsaturated fats. No wonder we serve at Charm of the Algarve our home made Bircher muesli regularly. Due to its high nutritional value, the muesli mixture provides the body with a lot of energy for a long time and, above all, makes you feel full. The original Swiss recipe from 1900 contains the following ingredients:
• Oat flakes
• Milk
• water
• grated apple
• lemon juice
These five foods together make the classic muesli. Nowadays, there are many variations on Max Bircher Benner’s basic Bircher Müsli recipe. Everyone can add their own creative ideas as they wish. Currently, for example, the addition of chia seeds is in. But hazelnuts, almonds or cashews are also popular. Here we use walnuts for an even better taste. There really are no limits to the creations. At Charm of the Algarve we infuse the oat flakes with apple juice the night before. But despite all the experimentation, one thing must be clear: there is definitely no getting around oat flakes as the basis for Bircher muesli. Enjoy!
