This is the one for the client who thinks Scotland means roughing it.

The Torridon was built as a hunting lodge in 1887 and has been family-run since 1993. It sits on 58 acres on the shore of the loch, Munros on every side, bordering Beinn Eighe, the oldest national nature reserve in Britain.

Walk all day, then eat at 1887, the dining room that just earned its first Michelin star and a Green Star for sustainability, working off the estate's own farm and kitchen garden.

Wilderness and a tasting menu, same address.

I can't think of another hotel where the art is the reason to book.

The Fife Arms reopened in 2018 after Iwan and Manuela Wirth, the gallerists behind Hauser & Wirth, spent years restoring it.

What they filled it with is the point. 16,000 pieces, a 1953 Picasso of Françoise Gilot, a Lucian Freud portrait over the sofa in the lobby. 46 rooms, no two the same.

It sits high in the Cairngorms, so even a July afternoon stays cool. For an art-leaning couple, this is the whole trip, not a stop on one.

Bushmills has been up there since 1608, so the north was never short on whiskey.

What's new is Belfast.

Almost 90 years without a working distillery, and now there are two, both worth the stop.

Pair them with the Causeway Coast and your client gets whiskey and headline sightseeing in one leg.

This is the kind of detail a client remembers long after the trip.

In the 1740s, Richard Guinness was the land agent at Cashel Palace, then the archbishop's residence.

He grew hops in the garden and brewed ale with them for the house.

His son Arthur was later left £100 in the will of that same archbishop, Arthur Price, who was also his godfather. He took it to Dublin and started a brewery you've heard of.

Today Cashel Palace is a Relais & Châteaux hotel (a small collection of independent luxury properties), with a Michelin star at the Bishop's Buttery and a hops garden replanted from the original 1700s stock. The Rock of Cashel is a two-minute walk out the door.

What makes a slow trip work isn't the spa or the thread count.

It's two things: how much the property gives a client without leaving, and how little driving it takes to reach what's nearby.

Every one of these seven does both.

So a client settles in for a few nights instead of living out of the car.

When clients say they want "ancient history" and you steer them to Italy or Greece, fair enough.

But Ireland is hiding some of the oldest sites in Europe.

Poulnabrone Dolmen sits in the Burren, between Galway and the Cliffs of Moher. It was in use as a burial site from 3800 BC. Older than the pyramids.

No ticket booth, no visitor center, just a portal tomb in a limestone field.

Sells itself to clients who care about layered history.
